It dates back to pre-Columbian times, when indigenous peoples such as the <strong>Cumanagotos<\/strong>, <strong>Timoto-Cuicas<\/strong> and <strong>Muiscas<\/strong> cultivated corn, their main source of food. This sacred grain, the mainstay of the Americas&#8217; food culture, was processed by hand: boiled, ground by hand, then shaped into patties and cooked on flat stones called <em>budare<\/em>.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">The term <em>arepa<\/em> probably comes from the word <em><strong>erepa<\/strong><\/em>meaning \u201ccorn\u201d in the language of the Cumanagotos, a people who inhabited what is now the Anzo\u00e1tegui region of Venezuela. This linguistic root bears witness to a <strong>strong link between the product and indigenous civilizations<\/strong>. Which makes arepa a corn bread.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">The arrival of the Spanish colonists brought its share of transformations to the preparation of arepa. Although <strong>corn<\/strong> remained the central ingredient, the Spaniards introduced <strong>new ingredients<\/strong> and <strong>cooking techniques<\/strong>. The first <strong>toppings<\/strong> appeared, and arepa began to be baked not only on traditional stones or slabs, but also in imported or adapted <strong>metal ovens<\/strong>.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Over the course of the 20th century, arepa has become a <strong>staple<\/strong> in every region of Colombia. Each geographical area has gradually developed its <strong>own version<\/strong>, influenced by <strong>local produce<\/strong>, <strong>climates<\/strong> and <strong>regional culinary traditions<\/strong>. The result? A mosaic of recipes, textures and tastes:<strong>Colombian arepa<\/strong> today comes in a <strong>wide variety of forms and flavors<\/strong>, each bearing the identity of its territory of origin.   <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Colombia vs Venezuela: a dish shared by two nations<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Today, arepa is a gastronomic common ground between two sister countries: Colombia and Venezuela. While each claims an intimate and emotional relationship with this dish, researchers and chefs agree that its origins precede any geopolitical boundaries. <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">As Carlos Gaviria Arbel\u00e1ez, Colombian chef and author of the book <em>Arepas colombianas<\/em>:<\/p>\n\n<blockquote class=\"wp-block-quote eplus-wrapper is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"eplus-wrapper wp-block-paragraph\">\u201cThe arepa has no passport or identity card. It is a native product of the Americas.\u201d<\/p>\n<\/blockquote>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">For his part, Venezuelan writer Ricardo Estrada Cuevas, in his book <em>Arep\u00f3logo<\/em>, points out that <strong>the arepa dates back some 900 years<\/strong>, well before the creation of modern states. It therefore belonged to a shared geographical and cultural territory. <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Although arepa is a common food, its role in the culinary habits of both countries differs. Although <strong>Colombian and Venezuelan arepas<\/strong> share a common corn-based origin, they have evolved in distinct ways according to the traditions of each country.   <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">In <strong>Venezuela<\/strong>, arepa is usually <strong>thick<\/strong>, then <strong>opened and stuffed with<\/strong> a wide variety of ingredients &#8211; meats, vegetables, cheeses, sauces &#8211; and is often a <strong>main course<\/strong>.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">In <strong>Colombia<\/strong>, on the other hand, arepa is <strong>finer<\/strong>, and in many regions is eaten <strong>plain<\/strong>, or simply with <strong>cheese<\/strong>, <strong>butter<\/strong> or <strong>eggs<\/strong>, as a<strong>side dish<\/strong>, much like bread in other cultures.<\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">This <strong>difference in usage<\/strong> has given rise to a wide variety of recipes and preparation methods in both countries, each reflecting <strong>local<\/strong> <strong>eating habits<\/strong> and <strong>culinary values<\/strong>.<\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">But Venezuelan arepas are also eaten in Colombia, and vice versa.<\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Colombians and arepas today<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">The average Colombian household consumes <strong>more than 900 arepas a year<\/strong>, or around <strong>77 a month<\/strong> &#8211; proof of the central place this cake occupies in the country&#8217;s daily culinary routine.<\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Since 2013, every second Saturday in September has been chosen as <strong>World Arepa Day<\/strong>. A recent survey revealed that <strong>67% of Colombians<\/strong> consider arepa an <strong>indispensable<\/strong> part of their daily diet. <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">This World Day not only celebrated a traditional dish, but also highlighted the <strong>growing influence of arepa in world gastronomy<\/strong>, now a <strong>fully-fledged ambassador for Colombian flavours<\/strong>.<\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">With the mass emigration of Venezuelans and Colombians around the world, arepa has conquered the streets of Madrid, New York, Santiago and Paris. However, the taste of Colombian arepas can vary greatly depending on the region you&#8217;re in, as the ingredients and ways of preparing them vary enormously. The result: very different arepas from one corner of the country to the next.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">That&#8217;s why we&#8217;ve put together a selection of 9 of Colombia&#8217;s most emblematic and traditional arepas.<\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa de queso  <\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Typical of the Andean regions and the Caribbean coast,<strong>arepa de queso<\/strong> is soft, often slightly sweet, and generously topped with melting white cheese. It is generally made with white or yellow corn, sometimes mixed with milk for a softer texture. The cheese can be incorporated directly into the dough or slipped into the center. Served warm, it offers an irresistible contrast between a golden crust and a melting center. It is very popular at breakfast, accompanied by a Colombian coffee or hot chocolate.    <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa paisa  <\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">In the<strong>Antioquia<\/strong> region (Medell\u00edn and surrounding areas),<strong>arepa paisa<\/strong> is ubiquitous. Thin, round and with no integrated filling, it accompanies almost every meal, much like bread. Made from ground white corn, it&#8217;s generally eaten toasted or grilled, with a knob of butter or grated cheese on top. It&#8217;s not a spectacular arepa, but its simplicity highlights the taste of corn, and it embodies the everyday conviviality of antioque\u00f1a families. In a typical dish like <em>bandeja paisa<\/em>, its place is assured.    <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa rellena<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">The<strong>arepa rellena<\/strong> is the fruit of modernity and culinary creativity. It takes the form of a thick arepa split in two, then stuffed with a multitude of ingredients: shredded meat, chicken, sausages, saut\u00e9ed vegetables, homemade sauces, egg, avocado&#8230; It&#8217;s a veritable <strong>gourmet bomb<\/strong>, reminiscent of a sandwich or kebab, but with the unique taste of arepa as its base. Extremely popular in the night-time street food scene, it embodies the diversity and culinary dynamism of modern Colombia.  <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa de huevo<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Originating in <strong>Cartagena, Barranquilla and the whole Caribbean region<\/strong>,<strong>arepa de huevo<\/strong> is a must-try street specialty. Its preparation is technical: a thin arepa is first fried to create a puffy envelope, then an opening is made to pour in a raw egg, then it is fried again. The result? A crispy arepa on the outside, with a runny yolk on the inside. Spicy minced meat is sometimes added for an even more gourmet version. A popular snack, often enjoyed at the end of the day or during local festivals.     <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa boyacense  <\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\"><strong>Boyacense arepa<\/strong>, from the <strong>Boyac\u00e1<\/strong> highlands, is one of the most recognizable. Smaller and thicker, it combines yellow corn flour, fresh cheese (often <em>cuajada<\/em>), butter, sugar and sometimes even aniseed. It&#8217;s baked in the oven or on a griddle, giving it a soft texture on the inside and a slightly crunchy exterior. It has a warm, sweet aroma, perfect for the cold climates of the Andean region. It is often eaten as a snack or for breakfast, with hot chocolate.    <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa de choclo  <\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\"><strong>Arepa de choclo<\/strong> (or <em>arepa de ch\u00f3colo<\/em>) is a variety that is much appreciated for its naturally sweet taste. It&#8217;s made from <strong>choclo<\/strong>, soft (young) corn, often ground fresh to preserve its sweetness. It&#8217;s usually pan-fried with a little butter, and almost always with a generous slice of <strong>cream cheese melting<\/strong> in the center or on top. It is very popular in Andean regions (such as <strong>Cundinamarca<\/strong>, <strong>Tolima<\/strong> or <strong>Boyac\u00e1<\/strong>).   <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa de ma\u00edz pelado<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\"><strong>Arepa de ma\u00edz pelado<\/strong> is one of Colombia&#8217;s oldest and most traditional products. It is made from whole corn kernels, usually white, which are <strong>pelados<\/strong> (shucked) in the traditional way: boiled with ash or lime to remove the husk. This process, called <em>nixtamalization<\/em>, intensifies the corn&#8217;s flavor and gives it a unique, slightly grainy texture. Once the corn has been peeled, it is washed, ground and transformed into dough. They are particularly widespread in the Santander region.    <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa de yuca<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\"><strong>Arepa de yuca<\/strong> (or manioc) is a delicious alternative to corn arepas, typical of several tropical regions of Colombia, notably the Caribbean coast and certain Amazonian areas. Made from <strong>grated or boiled yuca, then crushed<\/strong>, this arepa is distinguished by its melt-in-the-mouth, slightly elastic texture and sweet, earthy taste. <strong>Fresh cheese<\/strong> is often added for a salty, creamy contrast, and sometimes even butter or a little sugar, depending on local tastes.    <\/p>\n\n<h3 class=\" wp-block-heading eplus-wrapper\">Arepa oca\u00f1era<\/h3>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">The flavors of Santander&#8217;s Norte region have given rise to the<strong>arepa oca\u00f1era<\/strong>, an emblematic specialty of the<strong>Oca\u00f1a<\/strong> region. Made from <strong>white corn<\/strong> and water, this arepa is distinguished by its <strong>extreme finesse<\/strong> and unique feature: it <strong>swells slightly when cooked<\/strong>, creating a light, supple texture. Heat the water without bringing to the boil, then pour over the mixture. Mix well with a spatula until smooth. Add the grated mozzarella and knead for 2-3 minutes.   <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Shape the arepas by hand: they should be about 10 cm in diameter and 1 cm thick. There are 2 ways to cook them. Either fry with rapeseed or sunflower oil, or grill<em>(asada<\/em> in Spanish), in a frying pan or on a grill with a little butter. In both cases, you&#8217;ll need to let each side brown (about 5 min per side), taking care not to burn them.   <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">And now it&#8217;s ready! Now all you have to do is enjoy. Arepas can be eaten at any time of day: for breakfast, as a snack or even for a light supper.  <\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\"><em>Tip<\/em>: once the arepa is cooked and hot, and if you&#8217;re greedy, you can also put a slice of cheese on top for added pleasure (or open the arepa and top it with a slice of cheese, then 1-2 minutes in the pan for the cheese to be hot and melted)!<\/p>\n\n<p class=\"eplus-wrapper wp-block-paragraph\">Arepas freeze perfectly, so don&#8217;t hesitate to make large quantities to keep on hand for the following months (as long as you have room in the freezer!).
